This was a dish we had one evening in the Hotel Los Augustinos in Haro when we went to visit Sierra Cantabria. The weather had turned from the long lazy days of summer to cooler nights and even a few spots of rain and this dish was just the thing to warm the insides. Enjoy it washed down with Rioja Crianza from Sierra Cantabria.
Ingredients
1 medium onion, chopped
2 cloves garlic, crushed
225 g cooking chorizo cut into half inch roundels
750 g Maris Piper Potatoes, cubed in about 1 inch pieces
half litre water or stock
1 tbsp sweet paprika
1 tsp salt (or to taste)
1 bay leaf
Method
In a large pan heat a couple of tablespoons of olive oil (not extra virgin which will impart too much flavour) over a low flame and then gently sweat the chopped onion until it becomes translucent and soft. Add the garlic and cook for a further minute then add the chorizo and sweat for a further 2 minutes.
Add the potatoes and stir to coat with the oils. Then add the paprika, salt and pepper and a bay leaf. Just cover the potatoes with water or stock and bring to the boil. Cover and simmer for about 20 minutes until the potatoes are tender then ladle into soup bowls and enjoy with the Rioja.
Serve with Rioja Crianza from Sierra Cantabria and Enjoy.
