The perfect recipe to kickstart 2022!

Now that Christmas and New Year are over for another year, it’s been fairly traditional for people to start a diet or to give up the booze for a month. Sounds pretty frightening to us! Our preferred way of shedding a few pounds while still working up a thirst is to go out walking and get the blood coursing around the veins.

Of course, it does get pretty chilly in January so it’s always good to come home to some nice heart-warming food and one of the best meals after a long walk is a traditional Lancashire Hot Pot. This should traditionally be made with lamb but beef can be just as good. 

One of our favourite chefs for this style of food is James Martin and although he’s a Yorkshire lad, his Lancashire recipe is really good and very tasty. You can do everything in his recipe up to the final flourish and then keep it in the fridge for a day or so when all of the flavours will come together and really tickle your tastebuds after a good walk. Simply reheat it in a low oven and open a good bottle of Cotes du Rhone from Chateau St Roch. Simple!!
