Astoria’s Yu Sushi was originally crafted, as the name suggests, to pair perfectly with sushi, though it makes a superb aperitif or partner to any fish dish. Pale straw yellow in colour, it shows a fine, persistent mousse with elegant aromas of fresh fruit. On the palate it’s clean, bright and delicately fruity, finishing crisp and refreshingly dry.
The grapes are sourced from Astoria’s hillside vineyards in Treviso, and the wine sits on the drier side with just 5–6g of sugar per litre and only 63 calories per 100ml. Serve well-chilled (6–8°C) to bring out all its vibrant, fruity charm.
This is a wine designed for immediate consumption rather than cellar ageing. The primary fruit and crisp acidity are at their peak upon release and will remain vibrant for 18-24 months when properly stored. Beyond 2028, the delicate fruit character may begin to fade and the wine will lose the bright freshness that defines its food-pairing capabilities. Unlike traditional method sparkling wines, this Charmat-method Prosecco will not develop complex secondary flavours with age.
Tasting Notes
AppearancePale straw yellow with a fine, persistent mousse and steady stream of delicate bubbles.
NoseClean and bright with fresh apple and pear aromatics. Subtle white flower scents emerge alongside a mineral edge that speaks to the hillside terroir. The nose is restrained but precise, avoiding the overt fruitiness of many commercial Proseccos.
PalateCrisp and linear with excellent acidity that cuts through cleanly. Delicate fruit flavours of green apple and citrus are balanced by a dry, almost saline minerality. The low dosage (5-6g/L) keeps the wine bone-dry and refreshing, with a light body that doesn't overwhelm delicate foods.
FinishClean and dry with lingering citrus freshness and a subtle bitter almond note.
Overall impressionA precisely crafted extra brut Prosecco that prioritises food compatibility over standalone appeal.
Food Pairings
In the Veneto, dry sparkling wines like this traditionally accompany cicchetti - small plates of marinated seafood, baccalà mantecato, and sarde in saor served in Venetian bars. The wine's crisp acidity pairs naturally with the region's abundant fresh fish from the Adriatic, particularly branzino and orata prepared simply with olive oil and herbs. Locals also enjoy such wines with risotto alle vongole or spaghetti alle vongole veraci, where the wine's minerality complements the briny sweetness of Adriatic clams.
We think this wine would go well with
Serve well-chilled at 6-8°C in tulip-shaped flutes to preserve the delicate mousse and concentrate the subtle aromatics. No decanting required - this wine is best enjoyed immediately upon opening to capture its fresh, vibrant character. The low calorie count (63 per 100ml) and bone-dry style make it ideal for extended aperitif service without palate fatigue.
The grapes are sourced from Astoria's hillside vineyards in Treviso, where the elevation provides excellent drainage and temperature variation between day and night. The calcareous clay soils typical of this part of Veneto retain moisture during dry periods whilst allowing excess water to drain freely. This terroir produces Glera grapes with bright acidity and delicate fruit character, ideal for creating the clean, mineral-driven style that defines Yu Sushi Extra Brut.
Whilst not bound by the strict geographic limitations of Prosecco DOCG, this wine represents the broader Veneto IGT tradition of innovative sparkling wine production. Unlike Prosecco di Valdobbiadene or Conegliano, which must adhere to specific territorial and stylistic requirements, the Veneto IGT designation allows producers greater flexibility in vineyard sourcing and winemaking techniques. This freedom enables Astoria to craft specialised cuvées like Yu Sushi with very low residual sugar levels specifically designed for food pairing.
FAQs
What makes Yu Sushi different from regular Prosecco?
Yu Sushi is crafted as an extra brut with only 5-6g residual sugar per litre, making it significantly drier than standard Prosecco. This low dosage creates a cleaner, more mineral-driven profile specifically designed to complement delicate foods without overwhelming them.
Why is it called Yu Sushi?
The name reflects the wine's original purpose - to pair perfectly with sushi and sashimi. The extra-dry style and bright acidity complement the clean flavours of raw fish and rice, whilst the low alcohol and calorie content make it ideal for extended Japanese dining experiences.
How long will this wine keep once opened?
Like most Prosecco, Yu Sushi should be consumed within 24-48 hours of opening for optimal freshness and mousse retention. Use a proper sparkling wine stopper and refrigerate to maintain the bubbles and crisp character.
Is this suitable for people watching their calorie intake?
Yes, at only 63 calories per 100ml, Yu Sushi is notably lower in calories than many sparkling wines due to its minimal residual sugar content. The extra brut style makes it a lighter option for health-conscious consumers.
Can this replace Champagne for special occasions?
Whilst Yu Sushi offers excellent quality and food compatibility, it's designed as a food wine rather than a celebration wine. Its restrained, mineral style may lack the richness and complexity that many expect from celebratory sparkling wines.
What foods pair best beyond sushi?
The wine's crisp acidity and dry profile make it excellent with shellfish, oysters, smoked fish, and light seafood dishes. It also works well as an aperitif with canapés or alongside fresh goat's cheese and herb-based appetisers.
