Paco Molina Cava Brut is pale yellow in colour, it has medium intensity nose of white fruits - pear and apple - together with floral notes and a slight hint of creaminess. On the palate it is fresh and lively with predominant fruit flavours, and it culminates in a light, soft and extremely pleasant finish. Enjoy this fizz with some nibbles.
Paco Molina is made by the Cusiné family of Parés Baltà fame, and this delightful organic Cava is produced using the traditional method. It is a blend of three traditional Penedés grape varieties: Xarel.lo, Macabeo and Parellada.
The first gives a great floral freshness to the wine; the second adds a distinctive fruity character; and the last adds body and structure. Initial fermentation took place in stainless steel tanks at 16°C to preserve all of the fresh fruit qualities. Secondary fermentation took place in the bottle, where it was also aged for around 12 months.
