Domaine Saumaize-Michelin, led by Christine and Roger Saumaize, is a biodynamic estate located in Vergisson, near the Roche de Vergisson. Grapes are hand-harvested, and fermentation occurs naturally in barrel, followed by aging on the lees with occasional bâtonnage for 12 months.
